Traditional Recipe
Ingredients Needed:
- Chicken or meat pieces
- Onions, sliced
- Tomatoes, chopped
- Garlic, minced
- Ginger, minced
- Yogurt
- Zurbian spice mix
- Rice
- Lime (optional)
- Cooking oil
- Water
- Fresh cilantro for garnish
Instructions:
- In a large bowl, combine the zurbian spice mix with yogurt, minced garlic, and minced ginger to form a thick marinade. Add chicken or meat and mix well. Optionally squeeze lime juice over the meat. Cover and marinate for at least 4 hours or overnight.
- In a large pot, heat cooking oil over medium heat. Add sliced onions and sauté until golden brown. Add chopped tomatoes.
- Add the marinated meat to the pot. Cook on medium heat until browned and partially cooked through.
- Rinse rice in cold water until water runs clear. In a separate pot, bring water to a boil and add rice. Cook until 70% done, then drain.
- In a large heavy-bottomed pot, layer partially cooked rice and meat mixture. Start with rice, then meat, repeat, finishing with rice.
- Cover tightly with aluminum foil or a lid. Cook on low heat for 30-40 minutes on stovetop, or bake at 180°C (356°F) for 30-40 minutes until rice is fully cooked.
- Remove from heat and rest for 10 minutes. Fluff with a fork and garnish with fresh cilantro. Serve hot.
