Traditional Recipe
Ingredients Needed:
- Chicken or meat pieces
- Rice, preferably long-grain Basmati
- Onions, sliced
- Tomatoes, chopped
- Garlic, minced
- Ginger, minced
- Tomato paste
- Carrots, grated
- Raisins (optional)
- Water or chicken broth
- Cooking oil
- Fresh cilantro or parsley for garnish
- Sliced almonds or pine nuts for garnish (optional)
Instructions:
- Combine the kabsa spice mix with minced garlic, minced ginger, and a little water or oil to form a thick marinade. Add chicken or meat and mix well.
- In a large pot, heat cooking oil over medium heat. Add sliced onions and sauté until golden. Add chopped tomatoes and tomato paste and cook.
- Add the marinated chicken or meat to the pot. Cook on medium heat until browned and partially cooked through.
- Stir in grated carrots and raisins if using. Pour in water or chicken broth to cover the meat. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Rinse rice in cold water until clear. Add rice to the pot, ensuring enough liquid (about 1.5-2 cups per cup of rice). Add more water or broth if needed.
- Bring to a boil, reduce heat to low, cover tightly, and cook for 20-25 minutes until rice is fully cooked and liquid is absorbed. Avoid stirring.
- Remove from heat and let sit covered for 10 minutes. Fluff with a fork and garnish with cilantro or parsley, and sliced almonds or pine nuts. Serve hot.
