Traditional Recipe

Ingredients Needed: Chicken or meat pieces; rice (preferably long-grain Basmati); onions (sliced); tomatoes (chopped); garlic (minced); ginger (minced); tomato paste; carrots (grated); raisins (optional); water or chicken broth; cooking oil; fresh cilantro or parsley (for garnish); sliced almonds or pine nuts (for garnish, optional).

Instructions:

  1. Prepare the marinade: In a large bowl, combine Yemeni Biryani Mix with minced garlic, minced ginger, and a little water or oil to form a thick marinade. Add the chicken or meat pieces and mix well until thoroughly coated.
  2. Cook the onions and tomatoes: In a large pot, heat cooking oil over medium heat. Add sliced onions and saute until golden brown, then add chopped tomatoes and tomato paste and continue cooking.
  3. Cook the meat or chicken: Add the marinated chicken or meat to the pot with the onions and tomatoes. Cook on medium heat until browned and partially cooked through.
  4. Add the vegetables and liquid: Stir in grated carrots and raisins, if using. Pour in water or chicken broth to cover the meat, bring to a boil, reduce heat, and simmer for 20-30 minutes.
  5. Prepare the rice: Rinse the rice in cold water until the water runs clear. Add the rice to the pot with enough liquid to cook it, about 1.5 to 2 cups of liquid per cup of rice, adding more water or broth if needed.
  6. Cook the rice dish: Bring the mixture to a boil, reduce heat to low, cover tightly, and cook for 20-25 minutes, or until the rice is fully cooked and the liquid is absorbed. Avoid stirring during this time.
  7. Serve: Remove from heat and let sit covered for 10 minutes. Fluff with a fork, garnish with cilantro or parsley and sliced almonds or pine nuts, and serve hot.
