Traditional Recipe
Ingredients Needed: Chicken or meat pieces; rice (preferably long-grain Basmati); onions (sliced); tomatoes (chopped); garlic (minced); ginger (minced); tomato paste; carrots (grated); raisins (optional); water or chicken broth; cooking oil; fresh cilantro or parsley (for garnish); sliced almonds or pine nuts (for garnish, optional).
Instructions:
- Prepare the marinade: In a large bowl, combine Yemeni Biryani Mix with minced garlic, minced ginger, and a little water or oil to form a thick marinade. Add the chicken or meat pieces and mix well until thoroughly coated.
- Cook the onions and tomatoes: In a large pot, heat cooking oil over medium heat. Add sliced onions and saute until golden brown, then add chopped tomatoes and tomato paste and continue cooking.
- Cook the meat or chicken: Add the marinated chicken or meat to the pot with the onions and tomatoes. Cook on medium heat until browned and partially cooked through.
- Add the vegetables and liquid: Stir in grated carrots and raisins, if using. Pour in water or chicken broth to cover the meat, bring to a boil, reduce heat, and simmer for 20-30 minutes.
- Prepare the rice: Rinse the rice in cold water until the water runs clear. Add the rice to the pot with enough liquid to cook it, about 1.5 to 2 cups of liquid per cup of rice, adding more water or broth if needed.
- Cook the rice dish: Bring the mixture to a boil, reduce heat to low, cover tightly, and cook for 20-25 minutes, or until the rice is fully cooked and the liquid is absorbed. Avoid stirring during this time.
- Serve: Remove from heat and let sit covered for 10 minutes. Fluff with a fork, garnish with cilantro or parsley and sliced almonds or pine nuts, and serve hot.
