Traditional Recipe

Ingredients Needed:

  • Chicken or meat pieces
  • Rice, preferably long-grain Basmati
  • Onions, sliced
  • Tomatoes, chopped
  • Garlic, minced
  • Ginger, minced
  • Tomato paste
  • Carrots, grated
  • Raisins (optional)
  • Water or chicken broth
  • Cooking oil
  • Fresh cilantro or parsley for garnish
  • Sliced almonds or pine nuts for garnish (optional)

Instructions:

  1. Combine the madhghot spice mix with minced garlic, minced ginger, and a little water or oil to form a thick marinade. Add chicken or meat and coat thoroughly.
  2. In a large pot, heat cooking oil over medium heat. Add sliced onions and sauté until golden brown. Add chopped tomatoes and tomato paste and cook.
  3. Add marinated chicken or meat to the pot. Cook over medium heat until browned and partially cooked through.
  4. Stir in grated carrots and raisins if using. Pour in water or chicken broth to cover the meat. Bring to a boil, reduce heat, and simmer 20-30 minutes.
  5. Rinse rice in cold water until water runs clear. Add rice to the pot, ensuring enough liquid (about 1.5-2 cups per cup of rice). Add more water or broth if needed.
  6. Bring to a boil, reduce heat to low, cover tightly, and cook 20-25 minutes until rice is cooked and liquid is absorbed. Avoid stirring.
  7. Remove from heat and let sit covered for 10 minutes. Fluff with a fork and garnish with cilantro or parsley, sliced almonds or pine nuts. Serve hot.
